SUMMARY:

The objective of this study was to evaluate the use of cassava byproduct in the feeding of slow growing chickens in substitution of corn from the digestibility results and indicators of zootechnical performance, carcass yield, chemical composition and meat quality. The experiment was carried out at the facilities of the Federal Rural University of Amazonia - Campus of Parauapebas, divided into 3 stages: evaluation of the chemical composition of cassava residues, test to evaluate the digestibility of residues and experimental test of animal performance. Cassava scrapings (RM) and Cassava Starch Residue (RAM) samples were collected, analyzed and the byproducts were used for the digestibility test where slow-growing birds were used in a completely randomized experimental design (DIC) 3x8 with 8 birds each. RM and RAM by-products were added to the reference diet at a rate of 30 g / kg. Total excreta collection was performed from 19 to 22 days of age and the apparent metabolizable energy (EMA), nitrogen corrected apparent metabolizable energy (EMAN) and apparent dry matter digestibility (CMADM) values were determined. ), crude protein (CMACP) and ether extract (CMAEE) from cassava residues. In the performance trial 30-day-old slow-growing birds were distributed in a 4x9 DIC with 9 birds each. The treatments were diets containing different inclusions of dehydrated ADR (0, 6.8, 13.4 and 20g / kg) and two experimental diets. In the zootechnical performance was evaluated the weight gain (GP), feed intake (CR) and feed conversion (CA). At 84 days of age, two birds per repetition were slaughtered and the carcass weights were determined and after cooling the whole carcass weight, cuts weight and carcass yield were performed. Thigh and thigh breast sections were collected for staining, pH, drip weight loss (PPG), cooking weight loss (PPC), and sensory evaluation. The analysis data were subjected to regression analysis, and the level of significance of up to 5% of the F test through the SAS software GLM program was considered for model adjustment. Sensory analysis data were submitted to the nonparametric Sperman correlation coefficient test using the Genes software and the correlation coefficients calculated using the t test. For all variables, except for CMAEE (%), cassava starch residue presented values higher than cassava scrapings. Although the GP was negatively influenced by the inclusion of the residue in the growth phase the final GP of the birds was not affected. There was a quadratic effect (P <0.05) of the inclusion of ADR on the carcass yield of the animals so that the carcass yield decreased for the animals with diets containing 6.8 and 13.4g / kg of inclusion and later increased with the highest yields observed in animals fed with the treatments 0.0 and 20.0g / kg of RAM inclusion. A decreasing linear effect (p <0.05) was observed for b * staining for breast, thigh and thigh cuts for skin evaluation and for breast and thigh cuts for meat collection (after cooling). There was no effect of the inclusion of ADR on the pH, HR and PPC (%) variables (P> 0.05). There was a quadratic effect (p <0.05) for PPG on the thigh cut and increasing linear effect (p <0.05) for PPG on the thigh cut. In the global acceptance of the sensory evaluation, the 13.4 and 20 g / kg ADR treatments did not present significant differences in the grades. Thus, it is concluded that it is possible to replace maize with RAM at the maximum evaluated level.
