SUMMARY:

Brazil stands out on the global beef scene for having the largest commercial herd and being the world's largest exporter of this type of meat. Therefore, an overview of beef slaughter and the characteristics of its products at a regional level (spatial) and their annual variations (temporal) is an important tool for transferring information for the management, sustainability and development of the beef production chain in the region. The analysis of data from a slaughterhouse under the Federal Inspection System (SIF) located in the city of Santarém - PA, for the period from January 2013 to December 2019, made it possible to describe the main characteristics of the carcasses and their non-components of cattle slaughtered in the region. In this context, the project entitled Characterization of bovine carcasses produced in the Southwest and West regions of the state of Pará aims to show the community, specifically beef cattle producers, technicians, industries and the bodies involved in the activity, the type of carcass produced in the region, which will generate information that will guide those involved in the entire production chain to produce better quality meat, which could make it possible to conquer new markets, thus leveraging the region's gross domestic product by adding value to meat. The municipalities of Uruará, Placas and Rurópolis in the Southwest region, and Santarém, Belterra and Monte Alegre in the West were the ones that sent the most animals for slaughter. The slaughter of females and males was close in the West region and varied in the Southwest. The average carcass weight of males (236.86 kg) was higher than that of females (201.29 kg) in all years, although there was an increase in the carcass weight of females. The percentage of carcasses condemned by sex class was higher in females. The main causes of carcass condemnations in the West region were tuberculosis, brucellosis and jaundice, and in the Southwest for contusion, tuberculosis and brucellosis.
