SUMMARY:

The national meat production has evolved over the years and with that it has aimed to deliver qualitatively superior products, however failures in the management mechanism and the logistics of livestock management impact on large losses of potentially good products due to the occurrence of condemnation in the carcasses. This problem is common in the meatpacking industry and has generated significant economic losses, since the process of removing lesions on carcasses influences the loss of edible portions, reduced yields, the mischaracterization and commercial disqualification. In this way, the work aimed to highlight some factors that cause lesions in the carcasses of beef cattle before slaughter, pointing out steps related to the inherent characteristics of the animals and transport to the slaughterhouse. Data regarding the weights and production logistics of the 1980 batches of animals from 63 cities in the State of Pará and slaughtered between May 2020 - May 2021 were obtained from the database of a slaughterhouse located in the municipality of Castanhal - Pará. The identification of the injured carcasses was through images an imaging bank of the lots also belonging to the slaughterhouse, these carcasses were grouped into 5 classes of identification of regions of lesions, namely: the forequarter, ribs, loin, round and generalized. The factors considered as influential were sex, presence or absence of horns, frame size, Amazon season, coat condition, types of transport vehicle, load density (only for truck type vehicles) and distances traveled. The results showed that there is a higher occurrence of injured carcasses in the hindquarters and in a generalized way, with females being more vulnerable. Although there is no difference in the incidence of injured carcasses in relation to the frame size that considers the weight of the animals, in the rainy season when the animals tend to be heavier, the average of generalized injured carcasses was 2.21 ± 3.47 in the lots. possibly due to the intensification of weather conditions and, consequently, difficulties inherent to management. As for densities, loading below 200 Kg/m2 and above 600 Kg/m2 tend to increase the number of carcasses with bruises and, finally, it is noteworthy that there were significant differences between the distance classes for all regions. In the end, all variables have the capacity to enhance the incidence of carcasses with significant lesions, so paying attention to the situations to which the animals are exposed until the moment of slaughter are extremely important as they have an intense impact on production parameters and commercial interest.
