SUMMARY:

Beef is a food present in the Brazilian diet because it is an important source of nutrients, with annual per capita consumption estimated at 34,3 kg. The hygienic-sanitary-technological inspection of meat in slaughter establishments is a way of identifying diseases in the carcass through post-mortem inspection, preventing meat products unfit for consumption from causing risks to human health. This study aims to evaluate the main causes of complaints that affect the carcasses of bovids slaughtered in a refrigerated slaughterhouse under the State Inspection Service, located in the municipality of Santana, state of Amapá, in the period from 2020 to 2023. The study due to its importance to the bovine production chain in the state and related surrounding areas, since the evaluation of carcass condemnations will be based on criteria of current hygienic and sanitary standards. The completed health profile of the regions where animals involved in convictions come from will support recommendations for technical and sanitary measures aimed at participants in the chain, contributing to the population's food security.
