SUMMARY:

Cocoa production in Brazil is concentrated in the state of Pará, followed by Bahia, Rondônia, Espírito Santo, Amazonas and Mato Grosso. Over the past ten years, Brazil has seen a 10% increase in demand for its cocoa exports. This increase is in line with global market trends, as Brazilian consumers seek higher quality products. Over the past ten years, globally and locally, Brazil has seen demand for fine or flavored cocoa increase by 10%. In line with global market trends, consumers of Brazilian chocolate are now seeking higher quality. Cocoa bean samples will be collected from different producers by municipality (Uruará-PA, Medicilândia-PA, Brasil Novo-PA, Altamira-PA, Vitoria do Xingu-PA, Anapu-PA, Pacajá-PA, Novo Repartimento). General data will be collected on the producer, property, cocoa variety, age and health of the plant, types of structure and type of primary cocoa processing process used. The objective of this study is to analyze the relationship between the biometric characteristics and the chemical composition of cocoa beans, aiming to improve knowledge about factors that influence the quality and sensory properties of cocoa beans. After collecting the samples, the beans were subjected to physical and physicochemical analyses at the Laboratory for Processing Products of Plant and Animal Origin at the Federal University of Pará-UFPA, Altamira Campus, and chemical analyses at CVACBA - Center for the Valorization of Bioactive Compounds of the Amazon in Belém. The results of this research will contribute to the proposal for access to new markets for cocoa from the Trans-Amazonian and Xingu regions, as the results will be used as a basis for establishing a marketing strategy and for valuing the product, as these identified characteristics will be used as “potentials of the region's ‘terroir’ cocoa”. It is known that there is work already carried out by farmers, for a long time, but still in an empirical and cultural way, therefore it will be an opportunity to validate these experiences in a more scientific way, in addition to providing some technological innovations.
