SUMMARY:

Inaugurated in 1627, the Ver-o-Peso fair, which was initially just a checkpoint for goods and tax collection, became a large open market, later (1977) recognized by the National Historical and Artistic Heritage Institute (IPHAN) as an architectural and landscape ensemble. It is, above all, a place of intense social life and cultural exchange, involving activities of a commercial but also symbolic nature. This research aimed to contribute to discover the dimension of the supply of ready-to-eat food at the fair by the boiiras of Ver-o-Peso (through the profile of the marketer and economic-financial analysis of the activity) and, on the demand side, to reveal the significant attributes that influence the consumption decisions. Therefore, the food sector (boieiras) at the fair is one of the sectors most sought after by consumers, second only to the fruit and vegetable sector, due to the tradition of eating at the fair and in search of typical dishes including the fried fish dish with açaí. . However, issues of infrastructure, hygiene and safety are negative points raised by consumers and that consequently prevents other customers from attending the fair, despite its strengths of diversity, tourist attractiveness and the commercialization of foods, the improvement of weaknesses should be valued by marketers and public authorities, to strengthen the image of the fair and business and the food security of consumers. As for the socioeconomic condition, the boieiras were classified according to their income strata (high, medium and low) to assist in the identification of establishments that over time invested in innovation and qualification to improve the enterprise and its profitability. However, most marketers had a low level of management in the productive and financial process of the businesses, providing little investment in capital goods, as well as a low level of cooperation between the boerers, which weakens the expansion and success of the activity.
